Ingredients

  • All purpose flour (300g)
  • Cornstarch (200g)
  • Butter (200g)
  • Sugar (100g)
  • Egg Yolks (2)
  • Lemon Zest (1 teaspoon)
  • Dulce de leche (as needed)
  • Desiccated Coconut (Sprinkling)
  • Salt (a pinch)

Steps

  1. Prepare the Dough: In a bowl, cream together butter and sugar until light and fluffy. Mix in the egg yolks and lemon zest. Gradually add flour and cornstarch to form a dough. Chill for 1 hour.
  2. Bake the Cookies: Roll out the chilled dough on a floured surface, cut into circles, and place on a baking sheet. Bake in a preheated oven at 180°C (350°F) for 12-15 minutes. Allow to cool completely.
  3. Assemble the Alfajores: Spread dulce de leche on one cookie and top with another to create a sandwich. Roll the edges in desiccated coconut for a festive touch.
  4. Optional: For a richer treat, dip the assembled alfajores in melted chocolate and let them set on a wire rack.
