Ingredients

  • Banana (1 large)
  • Eggs (2 medium)
  • Baking Powder (pinch)
  • Vanilla Extract (sprinkling)
  • Oil (1 tsp)
  • Pecan Nuts (25g)
  • Raspberries (125g)

Steps

  1. In a bowl, mash 1 large banana with a fork until smooth.
  2. Add 2 medium eggs, a pinch of baking powder, and a sprinkling of vanilla extract to the mashed banana, mixing well.
  3. Heat a large non-stick frying pan over medium heat and brush it with 1 tsp of oil.
  4. Spoon half the batter into the pan to form two pancakes and cook for 1-2 minutes on each side until golden. Transfer to a plate.
  5. Repeat the cooking process with the remaining oil and batter.
  6. Serve the pancakes topped with 25g of pecan nuts and 125g of raspberries.
