- In a bowl, mash 1 large banana with a fork until smooth.
- Add 2 medium eggs, a pinch of baking powder, and a sprinkling of vanilla extract to the mashed banana, mixing well.
- Heat a large non-stick frying pan over medium heat and brush it with 1 tsp of oil.
- Spoon half the batter into the pan to form two pancakes and cook for 1-2 minutes on each side until golden. Transfer to a plate.
- Repeat the cooking process with the remaining oil and batter.
- Serve the pancakes topped with 25g of pecan nuts and 125g of raspberries.
