- Begin by preheating the oven to 180°C (fan), 200°C (conventional), or gas mark 6. Generously butter six non-stick friand or muffin molds and set aside.
- In a mixing bowl, sift together icing sugar and flour. Incorporate the almonds by mixing them in with your fingers until well combined.
- In a separate bowl, whisk the egg whites until they form a soft foam. Create a well in the center of the dry mixture, add the egg whites and zest from the lemon, and gently fold in the melted butter until a soft batter forms.
- Spoon the batter evenly into the prepared tins. Top each with a handful of blueberries and bake for 15-20 minutes, or until they are golden brown and firm to the touch.
- Allow the friands to cool in the tins for about 5 minutes before transferring them to a wire rack. Dust with icing sugar before serving for an extra touch of sweetness.
