Ingredients

  • Cashew Nuts (250g)
  • Icing Sugar (100g)
  • Egg Yolks (2)
  • Orange Blossom Water (2 tablespoons)
  • Almonds (100g)
  • Icing Sugar (To Glaze)

Steps

  1. Preheat your oven to 180°C (Gas Mark 4) and line a baking tray with parchment paper.
  2. In a mixing bowl, combine 250g of cashew nuts and 100g of icing sugar. Add 2 egg yolks and 2 tablespoons of orange blossom water, mixing until you achieve a smooth paste.
  3. Take portions of the cashew mixture and form small balls. Roll these balls in additional icing sugar for a sweet coating before placing them on the lined baking tray.
  4. Press an almond into the center of each ball.
  5. Bake in the preheated oven for about 20 minutes, or until the biscuits are lightly golden. Watch them closely to prevent burning.
