- Preheat your oven to 180°C (Gas Mark 4) and line a baking tray with parchment paper.
- In a mixing bowl, combine 250g of cashew nuts and 100g of icing sugar. Add 2 egg yolks and 2 tablespoons of orange blossom water, mixing until you achieve a smooth paste.
- Take portions of the cashew mixture and form small balls. Roll these balls in additional icing sugar for a sweet coating before placing them on the lined baking tray.
- Press an almond into the center of each ball.
- Bake in the preheated oven for about 20 minutes, or until the biscuits are lightly golden. Watch them closely to prevent burning.
