- In a bowl, combine beef tomatoes, red onion, and thyme. Season to taste, then drizzle with sherry vinegar and extra virgin olive oil. Allow the mixture to rest so the flavors can develop while you prepare the chorizo.
- Heat a dry pan over medium heat and fry the chorizo slices until they are browned on both sides. Serve the sautéed chorizo alongside the tomato salad, drizzled with a bit of the oil from the pan.
