- Peel oranges with a sharp knife, ensuring to remove all pith, then slice them thinly and arrange on a plate.
- Sprinkle the sliced oranges with demerara sugar and drizzle with Grand Marnier, setting it aside to infuse.
- Crumble Christmas pudding into large pieces and layer it in the bottom of a trifle bowl.
- Place the orange slices on top of the pudding, pouring any collected juices over it.
- Beat mascarpone until smooth, then mix in custard and spoon this mixture over the oranges.
- Lightly whip double cream and spread it over the custard layer.
- Top with a handful of flaked almonds and sprinkle with grated dark chocolate. Chill until you're ready to serve; this can be made a day in advance.
