  • Orange (3)
  • Christmas Pudding (300g)
  • Custard (500g)
  • Mascarpone (250g)
  • Double Cream (284ml)
  • Demerara Sugar (1 tbs)
  • Grand Marnier (2 tbs)
  • Flaked Almonds (Handful)
  • Dark Chocolate (Grated)

Steps

  1. Peel oranges with a sharp knife, ensuring to remove all pith, then slice them thinly and arrange on a plate.
  2. Sprinkle the sliced oranges with demerara sugar and drizzle with Grand Marnier, setting it aside to infuse.
  3. Crumble Christmas pudding into large pieces and layer it in the bottom of a trifle bowl.
  4. Place the orange slices on top of the pudding, pouring any collected juices over it.
  5. Beat mascarpone until smooth, then mix in custard and spoon this mixture over the oranges.
  6. Lightly whip double cream and spread it over the custard layer.
  7. Top with a handful of flaked almonds and sprinkle with grated dark chocolate. Chill until you're ready to serve; this can be made a day in advance.
