- Corned Beef (3 cups)
- Potatoes (3 chopped)
- Onion (1 medium chopped)
- Unsalted Butter (3 tablespoons)
- Freshly Chopped Parsley (Chopped)
- Black Pepper (Dash)
- Kosher Salt (Dash)

- In a large skillet, preferably cast iron, melt 3 tablespoons of unsalted butter over medium heat. Add 1 medium chopped onion and sauté until translucent.
- Mix in 3 cups of chopped corned beef and 3 chopped potatoes, spreading the mixture evenly across the pan. Increase heat to medium-high and press down with a metal spatula.
- Allow the mixture to cook without stirring until browned. Use the spatula to check for browning underneath. If browned, flip sections to brown the other side, pressing down again.
- If the mixture is sticking too much, add a bit more butter to the pan. Continue cooking until both the potatoes and corned beef are nicely browned.
- Remove from heat and stir in chopped fresh parsley. Season with freshly ground black pepper and add a dash of kosher salt to taste.
