  • Corned Beef (3 cups)
  • Potatoes (3 chopped)
  • Onion (1 medium chopped)
  • Unsalted Butter (3 tablespoons)
  • Freshly Chopped Parsley (Chopped)
  • Black Pepper (Dash)
  • Kosher Salt (Dash)

  1. In a large skillet, preferably cast iron, melt 3 tablespoons of unsalted butter over medium heat. Add 1 medium chopped onion and sauté until translucent.
  2. Mix in 3 cups of chopped corned beef and 3 chopped potatoes, spreading the mixture evenly across the pan. Increase heat to medium-high and press down with a metal spatula.
  3. Allow the mixture to cook without stirring until browned. Use the spatula to check for browning underneath. If browned, flip sections to brown the other side, pressing down again.
  4. If the mixture is sticking too much, add a bit more butter to the pan. Continue cooking until both the potatoes and corned beef are nicely browned.
  5. Remove from heat and stir in chopped fresh parsley. Season with freshly ground black pepper and add a dash of kosher salt to taste.
