- Toor dal (1 cup)
- Water (2-1/2 cups)
- Ghee (3 tbs)
- Chopped tomatoes (1 cup)
- Salt (1-1/2 tsp)
- Turmeric (1/4 tsp)
- Cumin seeds (1/2 tsp)
- Mustard seeds (1/2 tsp)
- Bay leaves (2)
- Green chili (1 tbs chopped)
- Ginger (2 tsp shredded)
- Cilantro (2 tbs)
- Red pepper (1/2 tsp)
- Sugar (1 tsp)
- Garam masala (1/4 tsp)

- Rinse and soak toor dal in about 3 cups of water for at least 1 hour until it doubles in volume. Drain the water afterward.
- In a pot, combine the soaked dal with 2-1/2 cups of water, salt, and turmeric. Cook over medium-high heat until the dal is soft and has a thick, soup-like consistency, which takes around 30 minutes.
- Meanwhile, in a frying pan, heat ghee over medium heat. Add cumin seeds and mustard seeds. Once they begin to crackle, add bay leaves, green chili, ginger, and red pepper. Stir for a few seconds until fragrant.
- Incorporate chopped tomatoes, salt, and sugar into the pan. Cook until the tomatoes are tender and mushy.
- Mix in cilantro and garam masala, cooking for about a minute.
- Pour this seasoning over the cooked dal, mix well, and let it cook for an additional minute.
- Serve hot with naan or rice.
