- Brush each aubergine slice with olive oil and season to taste. Heat a griddle pan or barbecue until hot. Grill the aubergine slices for 2-3 minutes on each side until they are golden brown and tender.
- In a bowl, combine Greek yogurt, tahini paste, garlic, lemon juice, and herbs. Season the mixture. Once ready, drizzle the dressing over the grilled aubergines and sprinkle with additional herb leaves.
