  • Olive Oil (2 tablespoons)
  • Greek Yogurt (250 g)
  • Tahini Paste (3 tablespoons)
  • Garlic (1 clove, crushed)
  • Lemon (Juice of 1)
  • Coriander (Handful)
  • Parsley (Handful)
  • Mint (Handful)

Steps

  1. Brush each aubergine slice with olive oil and season to taste. Heat a griddle pan or barbecue until hot. Grill the aubergine slices for 2-3 minutes on each side until they are golden brown and tender.
  2. In a bowl, combine Greek yogurt, tahini paste, garlic, lemon juice, and herbs. Season the mixture. Once ready, drizzle the dressing over the grilled aubergines and sprinkle with additional herb leaves.
