Ingredients

  • Pork tonkatsu (1 chopped)
  • Sushi rice (200g)
  • Eggs (2 Beaten)
  • Onion (1 large)
  • Vegetable stock (150ml)
  • Soy sauce (1 tbs)
  • Mirin (1 tsp)
  • Sugar (1 tsp)
  • Chives (Chopped)
  • Vegetable oil (1 tbs)

  1. In a pan, heat vegetable oil over medium heat and sauté sliced onion until golden brown. Add the chopped pork tonkatsu to the center of the pan.
  2. In a bowl, mix vegetable stock, soy sauce, mirin, and sugar. Pour three-quarters of this mixture around the tonkatsu, allowing it to simmer for a couple of minutes until the sauce thickens and the tonkatsu warms through.
  3. Pour the beaten eggs around the tonkatsu and cook for 2-3 minutes until the eggs are set but slightly runny.
  4. Serve the dish by dividing sushi rice into two bowls, topping each with half of the tonkatsu and egg mixture. Garnish with chopped chives and drizzle with additional soy sauce for extra flavor if desired.
