Ingredients

  • Lamb (750 g)
  • Olive Oil (4 tbsp)
  • Saffron (1.5 tsp)
  • Onion (1 large, chopped)
  • Parsley (30 g)
  • Butter (1 tbsp)
  • Water (25 ml)
  • Lemon (1)
  • Salt (to taste)
  • Black Pepper (to taste)

Steps

  1. In a large frying pan, heat olive oil over medium-high heat.
  2. Add lamb and cook until it is browned on all sides, approximately 5 minutes.
  3. Season with saffron, salt, and pepper to taste. Stir in three-quarters of the chopped onion.
  4. Pour in water and bring to a boil. Cover the pan, reduce the heat to medium-low, and simmer until the lamb is tender, about 15 minutes.
  5. Uncover the pan and stir in butter. Allow the sauce to reduce for 5 to 10 minutes until it reaches the desired consistency. Season again with salt and pepper to taste.
  6. Transfer the dish to a serving bowl, sprinkle with the remaining chopped onions and parsley. Garnish with wedges of lemon before serving.
