- Lamb (750 g)
- Olive Oil (4 tbsp)
- Saffron (1.5 tsp)
- Onion (1 large, chopped)
- Parsley (30 g)
- Butter (1 tbsp)
- Water (25 ml)
- Lemon (1)
- Salt (to taste)
- Black Pepper (to taste)

- In a large frying pan, heat olive oil over medium-high heat.
- Add lamb and cook until it is browned on all sides, approximately 5 minutes.
- Season with saffron, salt, and pepper to taste. Stir in three-quarters of the chopped onion.
- Pour in water and bring to a boil. Cover the pan, reduce the heat to medium-low, and simmer until the lamb is tender, about 15 minutes.
- Uncover the pan and stir in butter. Allow the sauce to reduce for 5 to 10 minutes until it reaches the desired consistency. Season again with salt and pepper to taste.
- Transfer the dish to a serving bowl, sprinkle with the remaining chopped onions and parsley. Garnish with wedges of lemon before serving.
