Ingredients

  • Dried white corn (500g)
  • Dried white beans (200g)
  • Pumpkin (300g)
  • Potatoes (200g)
  • Beef (300g)
  • Pork (200g)
  • Chorizo (1)
  • Onion (1 chopped)
  • Paprika (1 teaspoon)
  • Salt (to taste)
  • Pepper (to taste)

Steps

  1. Soak the dried white corn and beans in water overnight.
  2. In a large pot, brown the beef, pork, and chorizo. Add the chopped onion and cook until it becomes translucent.
  3. Add the soaked corn and beans, along with diced pumpkin and potatoes. Pour in enough water to cover the ingredients.
  4. Simmer the mixture for 2-3 hours until it thickens to your desired consistency.
  5. Serve the locro hot, ideally with bread on the side.
  6. For an enhanced flavor, consider toasting the corn slightly before adding it to the stew and add a spoonful of paprika or a dash of cumin for extra warmth.
