Steps
- Soak the dried white corn and beans in water overnight.
- In a large pot, brown the beef, pork, and chorizo. Add the chopped onion and cook until it becomes translucent.
- Add the soaked corn and beans, along with diced pumpkin and potatoes. Pour in enough water to cover the ingredients.
- Simmer the mixture for 2-3 hours until it thickens to your desired consistency.
- Serve the locro hot, ideally with bread on the side.
- For an enhanced flavor, consider toasting the corn slightly before adding it to the stew and add a spoonful of paprika or a dash of cumin for extra warmth.
