- For the meat, roast goat meat over medium heat for about 50 minutes, adding a pinch of salt while turning it occasionally.
- For the ugali, in a heavy-bottomed saucepan, bring water and a pinch of salt to a boil. Gradually stir in corn flour while letting it fall through your fingers.
- Lower the heat to medium-low and keep stirring regularly, breaking up any lumps with a spoon, until the mixture thickens and pulls away from the sides of the pot, which should take about 10 minutes.
- Remove the ugali from heat and allow it to cool.
- Transfer the ugali to a large serving bowl. Wet your hands with water, shape it into a ball, and serve.
- For the kachumbari, combine tomatoes, onion, green chilli, and coriander leaves in a bowl and mix well.
- Serve everything together and enjoy!
