Mbuzi Choma (Roasted Goat)

Ingredients

  • Goat Meat (1 kg)
  • Corn Flour (1 kg)
  • Tomatoes (2)
  • Salt (1 pinch)
  • Onion (1)
  • Green Chilli (1)
  • Coriander Leaves (1 bunch)

Steps

  1. For the meat, roast goat meat over medium heat for about 50 minutes, adding a pinch of salt while turning it occasionally.
  2. For the ugali, in a heavy-bottomed saucepan, bring water and a pinch of salt to a boil. Gradually stir in corn flour while letting it fall through your fingers.
  3. Lower the heat to medium-low and keep stirring regularly, breaking up any lumps with a spoon, until the mixture thickens and pulls away from the sides of the pot, which should take about 10 minutes.
  4. Remove the ugali from heat and allow it to cool.
  5. Transfer the ugali to a large serving bowl. Wet your hands with water, shape it into a ball, and serve.
  6. For the kachumbari, combine tomatoes, onion, green chilli, and coriander leaves in a bowl and mix well.
  7. Serve everything together and enjoy!
