Ingredients

  • Carrots (6, chopped)
  • Onion (1, sliced)
  • Garlic Cloves (4, minced)
  • Cumin Seeds (1 tsp)
  • Coriander Seeds (1/2 tsp)
  • Olive Oil (1 tbsp)
  • Garam Masala (1/4 tsp)
  • Lemon Juice (1 tsp)

Steps

  1. Preheat your oven to 180° C (350° F).
  2. In a mixing bowl, combine chopped carrots, sliced onion, garlic cloves, cumin, coriander, salt, and olive oil. Mix well.
  3. Spread the mixture onto a baking tray and roast in the preheated oven for 10-12 minutes, or until the carrots are tender. Remove from the oven and allow to cool.
  4. Once cooled, blend the roasted carrot mixture with a little water until smooth, then strain it into a bowl to remove any solids.
  5. In a non-stick pan, heat the strained carrot mixture. Add 2 cups of water and bring to a boil. Stir in garam masala and additional salt to taste.
  6. Remove from heat and mix in lemon juice for added flavor.
  7. Serve the soup hot, garnished as desired.
