- Carrots (6, chopped)
- Onion (1, sliced)
- Garlic Cloves (4, minced)
- Cumin Seeds (1 tsp)
- Coriander Seeds (1/2 tsp)
- Olive Oil (1 tbsp)
- Garam Masala (1/4 tsp)
- Lemon Juice (1 tsp)

- Preheat your oven to 180° C (350° F).
- In a mixing bowl, combine chopped carrots, sliced onion, garlic cloves, cumin, coriander, salt, and olive oil. Mix well.
- Spread the mixture onto a baking tray and roast in the preheated oven for 10-12 minutes, or until the carrots are tender. Remove from the oven and allow to cool.
- Once cooled, blend the roasted carrot mixture with a little water until smooth, then strain it into a bowl to remove any solids.
- In a non-stick pan, heat the strained carrot mixture. Add 2 cups of water and bring to a boil. Stir in garam masala and additional salt to taste.
- Remove from heat and mix in lemon juice for added flavor.
- Serve the soup hot, garnished as desired.
