Ingredients

  • rice stick noodles (6 oz)
  • chicken (1 cup, cooked and sliced)
  • Chinese broccoli (4 cups, chopped)
  • dark soy sauce (2 tbsp)
  • oyster sauce (2 tbsp)
  • soy sauce (2 tsp)
  • white vinegar (2 tsp)
  • sugar (2 tsp)
  • water (2 tbsp)
  • peanut oil (2 tbsp)
  • garlic (2 cloves, minced)
  • egg (1)

Instructions

Steps

  1. In a small bowl, combine dark soy sauce, oyster sauce, soy sauce, white vinegar, sugar, and water to make the sauce.
  2. Heat peanut oil in a wok over high heat and add minced garlic. Sauté until fragrant.
  3. Add chicken and Chinese broccoli stems to the wok. Cook until the chicken turns light golden brown.
  4. Move the chicken to one side of the wok, crack in the egg, and scramble it until cooked. It’s fine if it sticks and chars a bit for added flavor.
  5. Stir in rice stick noodles, Chinese broccoli leaves, and the prepared sauce. Mix gently until the noodles are well-coated and the leaves are wilted.
  6. Serve hot and enjoy!
