  • Golden Syrup (200g)
  • Butter (200g)
  • Self-raising Flour (250g)
  • Oatmeal (100g)
  • Egg (1 large)
  • Milk (4 tbs)
  • Black Treacle (85g)
  • Brown Sugar (85g)
  • Ground Ginger (1 tbs)

  1. Preheat your oven to 160°C (140°C fan) or gas mark 3. Grease a deep 22cm (9in) square cake tin and line it with baking parchment.
  2. In a bowl, whisk together 1 large egg and 4 tablespoons of milk.
  3. In a large pan, gently melt 200g of golden syrup, 85g of black treacle, 85g of brown sugar, and 200g of butter until the sugar has dissolved. Remove from heat.
  4. Combine 100g of oatmeal, 250g of self-raising flour, and 1 tablespoon of ground ginger in a mixing bowl, then stir this dry mixture into the syrup mixture, followed by the egg and milk mixture.
  5. Pour the batter into the prepared tin and bake for 50 minutes to 1 hour, until the top feels firm and slightly crusty.
  6. Allow the cake to cool in the tin. Once cool, wrap it in parchment and foil, and store it for 3-5 days to enhance its flavor and texture.
