Ingredients

  • Baby Lettuce Leaves (100 g)
  • Cherry Tomatoes (250 g)
  • Feta Cheese (50 g)
  • Pomegranate (1)
  • Olive Oil (60 ml)
  • Lemon Juice (2 tablespoons)
  • Honey (1 tablespoon)
  • Thyme (2 sprigs)
  • Spring Onions (3)
  • Red Chilli (1)

Instructions

Steps

  1. In a large bowl, mix together 60 ml of olive oil, 2 tablespoons of lemon juice, 1 tablespoon of honey, and the leaves from 2 sprigs of thyme. Season generously with salt and pepper.
  2. Add 100g of baby lettuce leaves, 250g of cherry tomatoes, 3 chopped spring onions, and 1 chopped red chilli to the bowl. Toss everything together until well combined.
  3. Carefully scoop the seeds from 1 pomegranate into a separate bowl, ensuring to remove any white membranes.
  4. Arrange the dressed salad on a serving platter, then sprinkle the pomegranate seeds and 50g of feta cheese over the top to finish.
