- In a large bowl, mix together 60 ml of olive oil, 2 tablespoons of lemon juice, 1 tablespoon of honey, and the leaves from 2 sprigs of thyme. Season generously with salt and pepper.
- Add 100g of baby lettuce leaves, 250g of cherry tomatoes, 3 chopped spring onions, and 1 chopped red chilli to the bowl. Toss everything together until well combined.
- Carefully scoop the seeds from 1 pomegranate into a separate bowl, ensuring to remove any white membranes.
- Arrange the dressed salad on a serving platter, then sprinkle the pomegranate seeds and 50g of feta cheese over the top to finish.
