- Begin by rubbing garlic over the beef fillets. Place them in a sandwich bag with olive oil, sherry vinegar, and parsley stalks. Mix everything together and use a rolling pin to gently pound the steaks. Let them marinate for 1-2 hours.
- Prepare the green sauce by adding all the sauce ingredients into a blender with 1 tablespoon of water. Blend until smooth. This sauce will yield more than needed for this recipe, but it can be stored in an airtight container for up to a week.
- Preheat a griddle or frying pan on high heat. Remove the garlic and parsley stalks from the steaks, then season them generously. Sear the steaks for 2 minutes on each side, then let them rest on a plate. Place the ciabatta halves, cut-side down, on the plate to absorb the juices.
- Slice the rested steaks and fill the ciabatta rolls with the beef, green sauce, and rocket.
