  • Passata (250g)
  • Red Pepper (1, chopped)
  • Red Chilli (1, chopped)
  • Garlic (1 clove, peeled and crushed)
  • Sherry vinegar (1 teaspoon)
  • Lime (Juice of 1/2)
  • Salt (to taste)
  • Black Pepper (to taste)

Instructions

Steps

  1. In a blender or using a stick blender, combine passata, red pepper, red chilli, garlic, sherry vinegar, and the lime juice. Blend until smooth.
  2. Adjust the seasoning to your preference.
  3. Serve the gazpacho over ice cubes for a refreshing touch.
