  • Water (2 cups)
  • Egg (1 large)
  • Soy Sauce (1 tbsp)
  • Chilli Sauce (1/2 tsp)
  • Spring Onions (1 tbsp)
  • Salt (1/2 tsp)
  • Pepper (1/2 tsp)

  1. Boil: Start by bringing 2 cups of water to a rolling boil. Gently place 1 large egg into the water and cook for about 6½ to 7 minutes.
  2. Ice Bath: Once the time is up, quickly transfer the egg to a bowl filled with ice water for 3 to 5 minutes to halt the cooking process.
  3. Marinate (Optional): For added flavor, peel the egg and soak it in a mixture of 2 tbsp soy sauce, 2 tbsp mirin, 1 tsp sugar, and 4 tbsp water for at least 4 hours or overnight.
  4. Prepare Noodles: While the egg is marinating, cook 1 packet of noodles according to package instructions.
  5. Serve: Once the noodles are ready, place them in a bowl. Slice the marinated egg in half, allowing the yolk to flow into the broth, and garnish with 1 tbsp spring onions, 1/2 tsp chilli sauce, 1/2 tsp salt, and 1/2 tsp pepper before serving.
