- In a bowl, soak red chilies, ginger, garlic, tamarind pulp, and spices (except oil) in vinegar.
- Stir in sugar and salt, followed by turmeric powder.
- Mix everything well and let it marinate for 35-40 minutes.
- Blend the mixture into a smooth, thick paste, adding more vinegar if necessary to achieve the right consistency.
- Prepare the mackerel by rinsing and making a slit down the center with additional incisions on top for better flavor absorption.
- Stuff the masala paste into the center and across the incisions, ensuring the fish is well coated.
- Allow the fish to marinate for another 30 minutes.
- Heat oil in a shallow pan and fry the stuffed mackerels until they are golden brown on both sides.
- Serve hot with salad, lime wedges, rice, and curry.
