Ingredients

  • Mackerel (4)
  • Dried Red Chilli (18)
  • Ginger (1 inch)
  • Garlic (8 cloves)
  • Black Pepper (1.5 tsp)
  • Cumin (1 tsp)
  • Turmeric Powder (½ tsp)
  • Cinnamon Stick (to taste)
  • Cloves (4)
  • Cardamom (2)
  • Sugar (1 tbsp)
  • Tamarind Ball (2 marble-sized)
  • Vinegar (2.5 tbsp)
  • Oil (for frying)

Instructions

Steps

  1. In a bowl, soak red chilies, ginger, garlic, tamarind pulp, and spices (except oil) in vinegar.
  2. Stir in sugar and salt, followed by turmeric powder.
  3. Mix everything well and let it marinate for 35-40 minutes.
  4. Blend the mixture into a smooth, thick paste, adding more vinegar if necessary to achieve the right consistency.
  5. Prepare the mackerel by rinsing and making a slit down the center with additional incisions on top for better flavor absorption.
  6. Stuff the masala paste into the center and across the incisions, ensuring the fish is well coated.
  7. Allow the fish to marinate for another 30 minutes.
  8. Heat oil in a shallow pan and fry the stuffed mackerels until they are golden brown on both sides.
  9. Serve hot with salad, lime wedges, rice, and curry.
