- Butternut Squash (350g)
- Linguine Pasta (350g)
- Garlic (3 cloves)
- Olive Oil (3 tbsp)
- Sage (1 small bunch)

- Preheat your oven to 200°C (or 180°C for fan ovens).
- Place butternut squash and garlic on a baking tray, then drizzle with olive oil.
- Roast in the oven for 35-40 minutes until the squash is tender.
- Meanwhile, cook linguine pasta according to the package instructions. Drain, reserving some cooking water.
- Blend the roasted squash and garlic with about 400ml of the reserved cooking water until smooth using a stick blender.
- In a frying pan, heat a bit of oil and fry sage until crispy. Drain the sage on kitchen paper.
- Combine the pasta and squash sauce in the frying pan, warming through.
- Serve topped with crispy sage.
