  • Butternut Squash (350g)
  • Linguine Pasta (350g)
  • Garlic (3 cloves)
  • Olive Oil (3 tbsp)
  • Sage (1 small bunch)

  1. Preheat your oven to 200°C (or 180°C for fan ovens).
  2. Place butternut squash and garlic on a baking tray, then drizzle with olive oil.
  3. Roast in the oven for 35-40 minutes until the squash is tender.
  4. Meanwhile, cook linguine pasta according to the package instructions. Drain, reserving some cooking water.
  5. Blend the roasted squash and garlic with about 400ml of the reserved cooking water until smooth using a stick blender.
  6. In a frying pan, heat a bit of oil and fry sage until crispy. Drain the sage on kitchen paper.
  7. Combine the pasta and squash sauce in the frying pan, warming through.
  8. Serve topped with crispy sage.
