Ingredients

  • Chicken Thighs (8 pieces)
  • Onion (3, thinly sliced)
  • Paprika (2 teaspoons)
  • Lemon (Zest and juice of 1)
  • Parsley (1 handful)
  • Chicken Stock (150 ml)
  • Olive Oil (1 tablespoon)

Instructions

Steps

  1. Preheat your oven to 190°C (170°C fan) or gas mark 5. In a large, ovenproof dish, combine all the ingredients and mix well using your hands. Don't forget to season.
  2. Bake the mixture for 45 minutes, stirring the onions after 20 minutes. The chicken should be golden and the onions should be tender when done. Serve alongside rice.
