  • Spaghetti (300g)
  • Chorizo (80g)
  • Red Pepper (2)
  • Parsley (20g)
  • Parmesan Cheese (50g)
  • Olive Oil (2 tbsp)
  • Salt (to taste)
  • Black Pepper (to taste)

Steps

  1. Begin by bringing a pot of water to a boil over high heat. While waiting, cut the chorizo into strips and chop the parsley and red peppers after removing any seeds.
  2. Once the water is rapidly boiling, add the spaghetti along with a generous pinch of salt. Stir and let it cook for 3 minutes.
  3. In a large skillet, heat the olive oil, then add the chorizo and red peppers along with a good amount of black pepper. Sauté for about a minute until everything is warmed through and the oil takes on a reddish hue from the chorizo's paprika.
  4. Reserve half a mug of the pasta cooking water, drain the rest, and add the spaghetti to the skillet.
  5. Mix in the parsley and parmesan cheese, tossing everything together. Add a splash of the reserved pasta water to keep it moist. Serve with additional parmesan on the side.
