- Spaghetti (300g)
- Chorizo (80g)
- Red Pepper (2)
- Parsley (20g)
- Parmesan Cheese (50g)
- Olive Oil (2 tbsp)
- Salt (to taste)
- Black Pepper (to taste)

- Begin by bringing a pot of water to a boil over high heat. While waiting, cut the chorizo into strips and chop the parsley and red peppers after removing any seeds.
- Once the water is rapidly boiling, add the spaghetti along with a generous pinch of salt. Stir and let it cook for 3 minutes.
- In a large skillet, heat the olive oil, then add the chorizo and red peppers along with a good amount of black pepper. Sauté for about a minute until everything is warmed through and the oil takes on a reddish hue from the chorizo's paprika.
- Reserve half a mug of the pasta cooking water, drain the rest, and add the spaghetti to the skillet.
- Mix in the parsley and parmesan cheese, tossing everything together. Add a splash of the reserved pasta water to keep it moist. Serve with additional parmesan on the side.
