- Paella Rice (250 g)
- Frozen Seafood mix (400 g)
- Vegetable Stock (800 ml)
- Olive Oil (1 tbsp)
- Onion (1 chopped)
- Red Pepper (1)
- Yellow Pepper (1)
- Garlic Clove (2 sliced)
- Saffron (Pinch)
- Lemon (Juice of 1/2)
- Parsley (Handful)

- In a large saucepan, heat olive oil over medium heat. Add the onion and sauté for 6-7 minutes until softened. Incorporate red and yellow peppers along with garlic, cooking for an additional 2 minutes.
- Stir in paella rice and cook for 1 minute, ensuring the rice is well-coated with the mixture.
- Pour in vegetable stock, add a pinch of saffron, and bring to a boil. Reduce heat and let it simmer uncovered for 20 minutes, stirring occasionally until the rice is tender.
- Mix in frozen seafood and the juice of 1/2 lemon. Cook for another 2 minutes or until the seafood is fully cooked and heated through. Serve hot, garnished with a handful of parsley.
