- In a mixing bowl, combine 2 summer squashes, 2 eggs, 300g flour, and 1/4 tsp baking powder. Mix until you achieve a thick, sticky consistency. If the mixture appears too runny, add a little more flour.
- Grease a round baking tray (approximately 2 inches deep) with a splash of olive oil on the base and edges.
- Transfer the mixture to the tray, spreading it out evenly. Pour a small amount of olive oil onto your hand and gently rub it over the top of the mixture in circular motions to flatten and give it a slight shine.
- Bake in a preheated oven at 180°C (about 350°F) for 40 minutes, or until the top is a golden brown.
- Allow to cool before cutting into squares for serving.
