- Pork tenderloin (200g)
- Egg (1)
- Tomato puree (30g)
- Soy sauce (10g)
- Vinegar (10g)
- Sugar (1 tsp)
- Starch (20g total (10g for marinade, 10g for starchy sauce))

- In a bowl, crack 1 egg and separate the egg white from the yolk.
- Cut 200g pork tenderloin into strips.
- For the marinade, mix 1/2 tsp salt, 10g starch, 10g soy sauce, and the egg white together. Marinate the pork strips for 20 minutes.
- Prepare a starchy sauce by combining the remaining 10g starch with a dash of water and 10g vinegar in a bowl.
- Heat oil in a wok to 190°C (375°F). Add the marinated pork strips and fry until browned. Remove the pork and set aside.
- In the same wok, add 30g tomato puree and 1 tsp sugar. Heat until well combined.
- Pour in some water and heat the sweet and sour sauce thoroughly before adding the pork strips back into the wok.
- Stir in the starchy sauce and mix everything together until well combined.
- Serve the dish hot, garnished with a dash of coriander.
