  • Mushrooms (2 pieces)
  • Tomatoes (2 pieces)
  • Black Pudding (1 slice)
  • Eggs (2 pieces)
  • Bread (1 slice)

  1. Preheat a flat grill plate on low heat and lightly brush it with olive oil.
  2. Begin by cooking the sausages. Place them on the grill and let them cook slowly for 15-20 minutes, turning them occasionally until golden. After 10 minutes, increase the heat to medium. If space is limited, fully cook the sausages and keep them warm in the oven.
  3. Prepare the bacon by making small cuts along the fatty edge. Grill for 2-4 minutes on each side until crispy, then keep warm in the oven.
  4. Clean the mushrooms with a pastry brush and trim the stalks. Season them with salt and pepper, drizzle with olive oil, and place them stalk-side up on the grill. Cook for 1-2 minutes, then turn and cook for another 3-4 minutes, minimizing movement to retain their juices.
  5. For the tomatoes, cut them in half and remove the green part. Season and drizzle with olive oil, then place cut-side down on the grill. Cook for 2 minutes without moving, then turn and season again. Cook for an additional 2-3 minutes until tender but intact.
  6. Slice the black pudding into 3-4 pieces, remove the skin, and grill for 1½-2 minutes on each side until crispy.
  7. For the fried bread, use a separate pan, heating it to medium and covering the base with oil. Fry the slice of bread for 2-3 minutes on each side until golden. If needed, add more oil for moisture and a knob of butter for flavor after flipping.
  8. To make the fried eggs, crack them into the pan with the fried bread after it’s cooked, add butter, and baste until cooked to your liking. Season and carefully lift them out.
  9. Serve all the components on warm plates and enjoy immediately with tomato ketchup or brown sauce.
