  • Turkey (140g)
  • Baguette (2 small)
  • Red Cabbage (75g)
  • Carrots (2 small)
  • Cucumber (1/4)
  • Chicken Liver (50g)
  • Mayonnaise (1 tablespoon)
  • Red Chilli (1 sliced)
  • Mint (Handful)
  • Rice Vinegar (½ tablespoon)
  • Golden Caster Sugar (1/2 teaspoon)
  • Ground Ginger (1/4 tsp)

  1. To prepare the pickled slaw, combine carrots and red cabbage in a large bowl. In a separate small bowl, mix together ground ginger, rice vinegar, golden caster sugar, and a pinch of salt. Pour this mixture over the vegetables and toss well. Allow it to marinate for at least 15 minutes.
  2. Slice the baguettes in half lengthwise and spread chicken liver pâté on the bottom half. Layer with the pickled slaw, cucumber, and turkey. Mix the mayonnaise with the sliced red chilli and then dollop this mixture on top. Finish by sprinkling mint leaves and additional sliced chilli. Put the sandwich together and enjoy!
