- Marinate the beef: In a medium bowl, mix together 1 teaspoon soy sauce, 1 teaspoon dry sherry, 1/2 teaspoon cornstarch, and 1/8 teaspoon black pepper. Add 1 lb sirloin steak slices, ensuring they are well coated. Let it marinate for 10 minutes.
- Prepare the sauce: In a small bowl, combine 2 tablespoons oyster sauce, 1 teaspoon dry sherry, 1 tablespoon soy sauce, and 1/4 cup chicken stock. Set aside.
- Blanch the broccoli: Boil a pot of water and add 1 lb broccoli. Cook for about 2 minutes until crisp-tender, then drain thoroughly.
- Stir-fry the beef: Heat a large pan or wok over high heat until water sizzles upon contact. Add 2 tablespoons high heat cooking oil and swirl to coat. Add the beef in a single layer and let it cook undisturbed for 1 minute.
- Flip the beef slices, add 2 cloves minced garlic, and stir-fry for an additional 30 seconds to 1 minute until the beef is no longer pink.
- Combine everything: Pour in the prepared sauce and a cornstarch slurry made with 1 teaspoon cornstarch dissolved in 1 tablespoon water. Stir until the sauce is boiling and has thickened, about 30 seconds, then mix in the blanched broccoli.
- Serve immediately, either on its own or accompanied by steamed rice.
