  • Black Pepper (1/8 tsp)
  • Water (1 tablespoon)

  1. Marinate the beef: In a medium bowl, mix together 1 teaspoon soy sauce, 1 teaspoon dry sherry, 1/2 teaspoon cornstarch, and 1/8 teaspoon black pepper. Add 1 lb sirloin steak slices, ensuring they are well coated. Let it marinate for 10 minutes.
  2. Prepare the sauce: In a small bowl, combine 2 tablespoons oyster sauce, 1 teaspoon dry sherry, 1 tablespoon soy sauce, and 1/4 cup chicken stock. Set aside.
  3. Blanch the broccoli: Boil a pot of water and add 1 lb broccoli. Cook for about 2 minutes until crisp-tender, then drain thoroughly.
  4. Stir-fry the beef: Heat a large pan or wok over high heat until water sizzles upon contact. Add 2 tablespoons high heat cooking oil and swirl to coat. Add the beef in a single layer and let it cook undisturbed for 1 minute.
  5. Flip the beef slices, add 2 cloves minced garlic, and stir-fry for an additional 30 seconds to 1 minute until the beef is no longer pink.
  6. Combine everything: Pour in the prepared sauce and a cornstarch slurry made with 1 teaspoon cornstarch dissolved in 1 tablespoon water. Stir until the sauce is boiling and has thickened, about 30 seconds, then mix in the blanched broccoli.
  7. Serve immediately, either on its own or accompanied by steamed rice.
