- Beef (500g)
- Onion (1 chopped)
- Carrots (2 chopped)
- Potatoes (2 chopped)
- Pumpkin (1 small)
- Dried Apricots (100g)
- Beef Stock (2 L)
- Salt (To taste)
- Pepper (To taste)

- In a large pot, brown the beef cubes until they develop a nice sear. Remove them and set aside.
- In the same pot, sauté onion until it turns translucent. Add carrots, potatoes, and pumpkin, cooking for a few minutes until slightly softened.
- Return the browned beef to the pot. Pour in beef stock and add dried apricots. Season generously with salt and pepper. Allow the mixture to simmer for 1-2 hours, or until the beef is tender.
- Serve the stew hot, preferably with a crusty piece of bread on the side.
