  • Beef (500g)
  • Onion (1 chopped)
  • Carrots (2 chopped)
  • Potatoes (2 chopped)
  • Pumpkin (1 small)
  • Dried Apricots (100g)
  • Beef Stock (2 L)
  • Salt (To taste)
  • Pepper (To taste)

Steps

  1. In a large pot, brown the beef cubes until they develop a nice sear. Remove them and set aside.
  2. In the same pot, sauté onion until it turns translucent. Add carrots, potatoes, and pumpkin, cooking for a few minutes until slightly softened.
  3. Return the browned beef to the pot. Pour in beef stock and add dried apricots. Season generously with salt and pepper. Allow the mixture to simmer for 1-2 hours, or until the beef is tender.
  4. Serve the stew hot, preferably with a crusty piece of bread on the side.
