- In a bowl, combine chicken, salt, white pepper, and ginger cordial. Mix thoroughly and set aside.
- Rinse rice under cold water in a metal bowl or pot a few times, then drain.
- In a large pot, add 8 cups of water and bring to a boil over high heat. Once boiling, lower the heat and stir the rice occasionally for about 20-25 minutes until it reaches your desired porridge consistency. You can add more water if you prefer a thinner porridge.
- Add the marinated chicken to the pot and continue to cook on low heat for an additional 10 minutes.
- Stir in spring onions, sliced ginger, a pinch of salt, and a pinch of pepper. Mix for about 10 seconds.
- Serve the porridge in bowls, garnished with coriander if desired.
