- Vegetable Oil (2 tablespoons)
- Chicken (450 grams)
- Garlic (3 tablespoons, chopped)
- Shallots (3 tablespoons, chopped)
- Red Chilli (3)
- Fish Sauce (2 tablespoons)
- Soy Sauce (2 teaspoons)
- Sugar (2 teaspoons)
- Basil Leaves (Handful)

Steps
- Heat a wok or large frying pan until extremely hot, then pour in 2 tablespoons of oil. Once hot, add 450g of chicken and stir-fry on high heat for about 8-10 minutes until it's browned all over. Remove the chicken using a slotted spoon and set it aside.
- In the same wok, add the remaining oil and toss in 3 tablespoons of chopped garlic and 3 tablespoons of chopped shallots. Stir-fry for 3 minutes until they turn golden brown.
- Return the chicken to the wok, then add 3 red chillies, 2 tablespoons of fish sauce, 2 teaspoons of dark soy sauce, and 2 teaspoons of sugar. Stir-fry on high heat for another 8-10 minutes, or until the chicken is thoroughly cooked. Finally, mix in a handful of basil leaves and serve immediately.
