- In a mortar, combine garlic, red chili, ground cumin, paprika, black pepper, cayenne pepper, and salt to create a paste using a pestle.
- Mix in olive oil to the paste until well combined, forming the dersa.
- Heat a large saucepan over medium heat and add the dersa, stir-frying for 2 to 4 minutes until fragrant.
- Add new potatoes, stirring to coat them in the dersa.
- Incorporate tomato puree and pour in enough water to just cover the potatoes.
- Bring the mixture to a boil, then reduce heat and simmer for about 40 minutes, or until the potatoes are tender.
- Serve the potatoes in a bowl, drizzling any remaining sauce over the top.
