Ingredients

  • New Potatoes (2 lbs)
  • Garlic (4 cloves)
  • Red Chili (1 small)
  • Olive Oil (2 tablespoons)
  • Ground Cumin (1 tsp)
  • Paprika (1 teaspoon)
  • Black Pepper (1/2 teaspoon)
  • Cayenne Pepper (1/2 teaspoon)
  • Tomato Puree (1 tablespoon)
  • Salt (1/2 teaspoon)
  • Water (Boiled)

Instructions

Steps

  1. In a mortar, combine garlic, red chili, ground cumin, paprika, black pepper, cayenne pepper, and salt to create a paste using a pestle.
  2. Mix in olive oil to the paste until well combined, forming the dersa.
  3. Heat a large saucepan over medium heat and add the dersa, stir-frying for 2 to 4 minutes until fragrant.
  4. Add new potatoes, stirring to coat them in the dersa.
  5. Incorporate tomato puree and pour in enough water to just cover the potatoes.
  6. Bring the mixture to a boil, then reduce heat and simmer for about 40 minutes, or until the potatoes are tender.
  7. Serve the potatoes in a bowl, drizzling any remaining sauce over the top.
