  1. In a large skillet or pot, heat 2 tablespoons of oil over medium heat until it shimmers.
  2. Add 2 medium red onions and cook, stirring occasionally, for about 5 to 7 minutes until softened.
  3. Incorporate 1 lb of shredded kale into the onions, mixing well. Lower the heat to medium-low, cover, and cook for 5 minutes.
  4. After 5 minutes, uncover, season with a dash of salt, and stir in 1 cup of double cream. Continue to cook uncovered for another 5 minutes, stirring occasionally until the cream slightly thickens and the dish becomes rich and flavorful.
  5. Serve hot alongside your favorite Kenyan stew and a side of ugali!
