Ingredients

  • strawberries (500g)
  • double cream (400ml)
  • meringue nests (3)
  • ginger cordial (1 tbsp)
  • mint (sprigs of fresh)

Steps

  1. Blend half of the strawberries until smooth to create a purée.
  2. Chop the remaining strawberries, setting aside four for garnish.
  3. Whip the double cream until it forms stiff peaks.
  4. Gently fold in the strawberry purée and crumbled meringue into the whipped cream.
  5. Add the chopped strawberries and the ginger cordial if desired, folding until combined.
  6. Spoon the mixture into four chilled wine glasses.
  7. Top with the reserved strawberries and a sprig of mint for garnish before serving.
