- Blend half of the strawberries until smooth to create a purée.
- Chop the remaining strawberries, setting aside four for garnish.
- Whip the double cream until it forms stiff peaks.
- Gently fold in the strawberry purée and crumbled meringue into the whipped cream.
- Add the chopped strawberries and the ginger cordial if desired, folding until combined.
- Spoon the mixture into four chilled wine glasses.
- Top with the reserved strawberries and a sprig of mint for garnish before serving.
