- Peel the prawns, ensuring to leave the tails on. Use a cocktail stick to remove the digestive tracts. Alternatively, leave the shells on if using a frying pan.
- In a flameproof terracotta pot or a frying pan, combine garlic, olive oil, and cayenne pepper over high heat. Once the garlic begins to turn golden, add the prawns and cook for 1-2 minutes on each side until they turn pink.
- Finish by sprinkling chopped parsley and freshly cracked black pepper over the dish. Serve immediately, taking care as the pot will remain hot.
