Ingredients

  • Raw King Prawns (250g)
  • Brown Rice (140g)
  • Frozen Peas (75g)
  • Red Onions (1 sliced)
  • Garlic Clove (2 sliced)
  • Red Chilli (1 sliced)
  • Coriander (Bunch)
  • Egg (4 large)
  • Soy Sauce (1 tablespoon)
  • Fish Sauce (1 tablespoon)
  • Vegetable Oil (2 tbsp)
  • Hotsauce (To serve)

Instructions

Steps

  1. In a wok, heat 2 tablespoons of vegetable oil over medium heat. Add 1 sliced red onion, 2 sliced garlic cloves, and 1 sliced red chilli, cooking for 2-3 minutes until golden.
  2. Introduce 250 grams of raw king prawns and sauté for 1 minute. Stir in 140 grams of brown rice and 75 grams of frozen peas, tossing until everything is heated through.
  3. Pour in 1 tablespoon of soy sauce and 1 tablespoon of fish sauce, mixing well with the rice. Fold in a bunch of chopped coriander and keep warm while preparing the eggs.
  4. In a separate frying pan, heat the remaining oil and fry 4 large eggs, seasoning them to taste.
  5. Serve the fried rice in bowls, topped with a fried egg and additional coriander. Optionally, add hot sauce for an extra kick.
