- In a bowl, combine olive oil, garlic, paprika, rosemary, and red chili, and add seasoning to taste. Transfer the mixture to a baking dish, add the sardines, and toss everything together thoroughly. Cover the dish and let it chill in the refrigerator for a few hours.
- Preheat your BBQ or griddle pan until hot. Grill the sardines for about 4-5 minutes per side, or until they are nicely caramelized and charred. Serve them on a plate, drizzled with additional olive oil, a sprinkle of paprika, and a squeeze of lemon juice from the wedges.
