  • Shrimp (1 lb)
  • Scotch Bonnet (2 chopped)
  • All-purpose seasoning (1 tablespoon)
  • Ground annatto (2 tsp)
  • Allspice (2 tsp)
  • Shrimp stock (3/4 cup)
  • Onion (1/4 cup diced)
  • Garlic (2 cloves minced)
  • White vinegar (2 tablespoons)
  • Thyme (3 sprigs)
  • Salt (To taste)

  1. In a medium bowl, mix together 1 lb shrimp with 2 chopped Scotch Bonnet peppers, 1 tablespoon all-purpose seasoning, 2 tsp ground annatto, and 2 tsp allspice. Allow to marinate for 10 minutes.
  2. In a large pan over medium heat, pour in 3/4 cup shrimp stock and bring to a gentle simmer. Add 1/4 cup diced onion and 2 minced cloves of garlic, cooking until softened, about 2 minutes.
  3. Introduce the marinated shrimp and 3 sprigs of thyme to the pan, spreading the shrimp evenly. Cover and cook for 5-7 minutes, stirring occasionally, until the shrimp are bright orange and fully cooked.
  4. Add 2 tablespoons white vinegar to the pan, stir, and cook for another minute. Season with salt to taste. Use a slotted spoon to transfer the shrimp to a plate and serve hot, drizzling some of the cooking liquid over the top.
