- Shrimp (1 lb)
- Snow Peas (1/2 lb)
- Peanut Oil (2 tablespoons)
- Scallions (4)
- Garlic (3 cloves Chopped)
- Ground Ginger (1 tablespoon)
- Soy Sauce (2 tsp)
- Chicken Stock (1/4 cup)
- Cornstarch (2 tsp)
- Dry sherry (1 tablespoon)
- Kosher Salt (1/2 tsp)
- Sesame Seed Oil (2 tsp)

- Marinate the shrimp: In a large bowl, combine cornstarch, dry sherry, and kosher salt. Add 1 lb shrimp and toss to coat. Allow to marinate for 15 to 20 minutes.
- Prepare ginger and garlic: While the shrimp is marinating, chop 3 cloves garlic and prepare 1 tablespoon ground ginger.
- Stir-fry ginger and garlic: Heat a wok or large sauté pan over high heat for 1 minute. Add 2 tablespoons peanut oil and let it heat for about 30 seconds. Stir in the ginger and garlic, cooking for about 30 seconds until fragrant.
- Cook shrimp and peas: Add the marinated shrimp (including all marinade), 1/2 lb snow peas, 2 tsp soy sauce, and 1/4 cup chicken stock to the pan. Stir-fry until the shrimp turns pink, approximately 2 minutes.
- Finish with scallions and sesame oil: Add 4 chopped scallions and stir-fry for an additional minute. Remove from heat, drizzle with 2 tsp sesame seed oil, and toss to combine. Serve hot with steamed rice.
