Ingredients

  • Salmon (400 g)
  • Avocado (3)
  • Spinach (400 g)
  • Cucumber (1)
  • Olive Oil (3 tbsp)
  • Honey (2 tsp)
  • Lime (1 (zest and juice))
  • Mint (4 tbsp)

Steps

  1. Season salmon fillets and rub with olive oil.
  2. In a bowl, combine lime zest, lime juice, honey, and remaining olive oil to create the dressing.
  3. Prepare the avocados: halve, pit, peel, and slice them.
  4. Cut the cucumber in half lengthwise, then slice.
  5. Arrange spinach, avocado, and cucumber on four plates, then drizzle with half of the dressing.
  6. Heat a non-stick pan over medium heat and fry the salmon for 3-4 minutes on each side until crispy yet moist.
  7. Place a cooked salmon fillet on each salad and drizzle with the remaining dressing. Serve warm.
