- Olive Oil (3 tbsp)
- Honey (2 tsp)
- Lime (1 (zest and juice))
- Mint (4 tbsp)

- Season salmon fillets and rub with olive oil.
- In a bowl, combine lime zest, lime juice, honey, and remaining olive oil to create the dressing.
- Prepare the avocados: halve, pit, peel, and slice them.
- Cut the cucumber in half lengthwise, then slice.
- Arrange spinach, avocado, and cucumber on four plates, then drizzle with half of the dressing.
- Heat a non-stick pan over medium heat and fry the salmon for 3-4 minutes on each side until crispy yet moist.
- Place a cooked salmon fillet on each salad and drizzle with the remaining dressing. Serve warm.
