- Salmon (2 fillets)
- Rice Noodles (100 g)
- Shiitake Mushrooms (150 g)
- Sweetcorn (125 g)
- Chicken Stock (1 L)
- Thai Red Curry Paste (2 tsp)
- Soy Sauce (1 tbsp)
- Lime (Juice of 2)
- Brown Sugar (Pinch)
- Coriander (Bunch)

- In a large pot, bring chicken stock to a boil, then mix in Thai red curry paste. Add rice noodles and cook for 8 minutes. Next, stir in shiitake mushrooms and sweetcorn, cooking for an additional 2 minutes.
- Incorporate the salmon into the pot and let it cook for 3 minutes or until fully cooked. Off the heat, mix in the juice of 2 limes, soy sauce, and a pinch of brown sugar. Serve in bowls, garnished with fresh coriander just before enjoying.
