  • Salmon (2 fillets)
  • Rice Noodles (100 g)
  • Shiitake Mushrooms (150 g)
  • Sweetcorn (125 g)
  • Chicken Stock (1 L)
  • Thai Red Curry Paste (2 tsp)
  • Soy Sauce (1 tbsp)
  • Lime (Juice of 2)
  • Brown Sugar (Pinch)
  • Coriander (Bunch)

Steps

  1. In a large pot, bring chicken stock to a boil, then mix in Thai red curry paste. Add rice noodles and cook for 8 minutes. Next, stir in shiitake mushrooms and sweetcorn, cooking for an additional 2 minutes.
  2. Incorporate the salmon into the pot and let it cook for 3 minutes or until fully cooked. Off the heat, mix in the juice of 2 limes, soy sauce, and a pinch of brown sugar. Serve in bowls, garnished with fresh coriander just before enjoying.
