- Prepare the cucumbers: Peel the cucumbers and slice them lengthwise into quarters. If the seeds are bitter, remove and discard them. Cut the quarters into 1/2-inch thick pieces.
- Combine the salad: In a serving bowl, add the sliced cucumbers. Sprinkle with salt and toss with sesame oil, rice vinegar, basil (if using), and chili flakes. Top with toasted sesame seeds if desired.
