  • chicken drumsticks (8)
  • sweet chilli sauce (2 tablespoons)
  • orange (Zest of 1)
  • orange juice (2 tablespoons)
  • garlic (1 clove, crushed)
  • Thai red curry paste (1 tablespoon)
  • salt (1/4 teaspoon)

  1. Preheat your oven to 200°C (180°C fan) or gas mark 6. Line a baking tray with aluminum foil.
  2. In a bowl, combine sweet chilli sauce, the zest and juice of an orange, crushed garlic, and Thai red curry paste along with a pinch of salt. Mix well.
  3. Add the chicken drumsticks to the marinade, ensuring they are well coated.
  4. Place the drumsticks on the prepared baking tray, making sure they are spaced apart. Pour any remaining marinade over the chicken.
  5. Roast in the oven for 35-40 minutes, or until the chicken is tender and cooked through. Once done, you can wrap them in foil or transfer them to a food container for serving or storage.
