- Preheat your barbecue or a griddle pan to high heat.
- In a bowl, combine chicken breasts, Thai red curry paste, and coconut milk, mixing until the chicken is thoroughly coated.
- Skewer the marinated chicken alongside red pepper, courgettes, and red onions.
- Grill the skewers on the barbecue or griddle for about 5-8 minutes, turning occasionally, until the chicken is fully cooked and has nice char marks.
- Serve the kebabs with herby rice, a fresh salad, and a lime half for squeezing over the top.
