  • Red Pepper (1 chopped)
  • Courgettes (1 chopped)
  • Red Onions (1 cut into thin wedges)
  • Lime (1, to serve)
  • Salt (to taste)
  • Black Pepper (to taste)
  • Vegetable Oil (1 tbsp)

  1. Preheat your barbecue or a griddle pan to high heat.
  2. In a bowl, combine chicken breasts, Thai red curry paste, and coconut milk, mixing until the chicken is thoroughly coated.
  3. Skewer the marinated chicken alongside red pepper, courgettes, and red onions.
  4. Grill the skewers on the barbecue or griddle for about 5-8 minutes, turning occasionally, until the chicken is fully cooked and has nice char marks.
  5. Serve the kebabs with herby rice, a fresh salad, and a lime half for squeezing over the top.
