Turkish Kumpir

Ingredients

  • Potatoes (2 large)
  • Butter (2 tablespoons)
  • Cheese (150 grams)
  • Onion (1 large)
  • Red Pepper (1 large)
  • Red Chilli Flakes (1 pinch)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash and pierce the potatoes with a fork, then bake them in the oven for about 45-60 minutes until tender.
  3. While the potatoes are baking, finely chop the onion and red pepper.
  4. In a mixing bowl, combine the chopped onion, red pepper, and a sprinkle of salt and pepper. Add a pinch of red chilli flakes if you like some heat.
  5. Once the potatoes are done, remove them from the oven and allow them to cool slightly.
  6. Cut each potato open lengthwise and fluff the insides with a fork. Add butter and cheese, mixing until well combined.
  7. Top your potato with the mixture from the bowl and any additional toppings you prefer.
