- Potatoes (2 large)
- Butter (2 tablespoons)
- Cheese (150 grams)
- Onion (1 large)
- Red Pepper (1 large)
- Red Chilli Flakes (1 pinch)

- Preheat your oven to 200°C (400°F).
- Wash and pierce the potatoes with a fork, then bake them in the oven for about 45-60 minutes until tender.
- While the potatoes are baking, finely chop the onion and red pepper.
- In a mixing bowl, combine the chopped onion, red pepper, and a sprinkle of salt and pepper. Add a pinch of red chilli flakes if you like some heat.
- Once the potatoes are done, remove them from the oven and allow them to cool slightly.
- Cut each potato open lengthwise and fluff the insides with a fork. Add butter and cheese, mixing until well combined.
- Top your potato with the mixture from the bowl and any additional toppings you prefer.
