  • Eggs (4)
  • Sugar (200g)
  • Self-raising Flour (200g)
  • Melted Butter (200g)
  • Vanilla Extract (1 tsp)
  • Ground Cinnamon (1 tsp)
  • Apples (3)
  • Salt (Pinch)
  • Powdered Sugar (For sprinkling)

  1. Begin by preheating your oven to 180°C (350°F). Grease and line a cake pan with baking paper.
  2. In a large bowl, combine 4 eggs and 200g sugar. Beat the mixture until it triples in volume and becomes fluffy.
  3. Sift in 200g self-raising flour and gently fold it into the egg mixture to retain the air.
  4. Add 200g melted butter (cooled slightly), 1 tsp vanilla extract, 1 tsp ground cinnamon, and a pinch of salt. Mix until well combined.
  5. Dice 3 apples and fold them into the batter, ensuring they are evenly distributed. Optionally, coat the apple pieces in some additional cinnamon.
  6. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  7. Place extra apple slices on top of the batter and press them in lightly. Optionally sprinkle with almond shavings.
  8. Bake in the preheated oven for approximately 45-50 minutes, or until a skewer inserted in the center comes out clean.
  9. Once baked, let the cake cool in the pan for a few minutes, then carefully transfer it to a wire rack to cool completely.
  10. Finally, dust the cooled apple cake with powdered sugar before serving.
