- Begin by preheating your oven to 180°C (350°F). Grease and line a cake pan with baking paper.
- In a large bowl, combine 4 eggs and 200g sugar. Beat the mixture until it triples in volume and becomes fluffy.
- Sift in 200g self-raising flour and gently fold it into the egg mixture to retain the air.
- Add 200g melted butter (cooled slightly), 1 tsp vanilla extract, 1 tsp ground cinnamon, and a pinch of salt. Mix until well combined.
- Dice 3 apples and fold them into the batter, ensuring they are evenly distributed. Optionally, coat the apple pieces in some additional cinnamon.
- Pour the batter into the prepared cake pan, smoothing the top with a spatula.
- Place extra apple slices on top of the batter and press them in lightly. Optionally sprinkle with almond shavings.
- Bake in the preheated oven for approximately 45-50 minutes, or until a skewer inserted in the center comes out clean.
- Once baked, let the cake cool in the pan for a few minutes, then carefully transfer it to a wire rack to cool completely.
- Finally, dust the cooled apple cake with powdered sugar before serving.
