- Start by freezing the bacon slices for easier chopping later.
- Wash and cut the potatoes into medium-sized cubes. To avoid browning, soak them in water until you're ready to cook.
- Heat 1-2 tablespoons of olive oil in a large skillet over medium-high heat, ensuring the oil coats the bottom of the skillet.
- Drain the potatoes and add them to the hot skillet. Season with salt, pepper, and a sprinkle of allspice to taste.
- Cook the potatoes for about 10 minutes, stirring frequently until they turn golden brown. If necessary, add an additional tablespoon of oil.
- Chop the frozen bacon and add it to the skillet. The bacon will render its fat and help cook the potatoes. Stir well and let it cook for 5-6 minutes until the bacon is crisp.
- Reduce the heat to medium-low, add the minced garlic, and toss to combine. Adjust the seasoning if needed. If using, add parsley at this stage.
- Cook the garlic for about one minute until fragrant.
- Just before serving, drizzle the maple syrup over the potatoes and toss. Allow it to cook for another minute to create a caramelized effect.
- Serve the dish warm, topped with a sunny side up egg if desired!
