  • Garlic Clove (1, minced)
  • Maple Syrup (1 tablespoon)
  • Parsley (to garnish)
  • Salt (a pinch)
  • Pepper (a pinch)
  • Allspice (to taste)

  1. Start by freezing the bacon slices for easier chopping later.
  2. Wash and cut the potatoes into medium-sized cubes. To avoid browning, soak them in water until you're ready to cook.
  3. Heat 1-2 tablespoons of olive oil in a large skillet over medium-high heat, ensuring the oil coats the bottom of the skillet.
  4. Drain the potatoes and add them to the hot skillet. Season with salt, pepper, and a sprinkle of allspice to taste.
  5. Cook the potatoes for about 10 minutes, stirring frequently until they turn golden brown. If necessary, add an additional tablespoon of oil.
  6. Chop the frozen bacon and add it to the skillet. The bacon will render its fat and help cook the potatoes. Stir well and let it cook for 5-6 minutes until the bacon is crisp.
  7. Reduce the heat to medium-low, add the minced garlic, and toss to combine. Adjust the seasoning if needed. If using, add parsley at this stage.
  8. Cook the garlic for about one minute until fragrant.
  9. Just before serving, drizzle the maple syrup over the potatoes and toss. Allow it to cook for another minute to create a caramelized effect.
  10. Serve the dish warm, topped with a sunny side up egg if desired!
