  • Potatoes (4 large)
  • Spring Onions (1 bunch)
  • Plain Flour (100g)
  • Egg White (1)
  • Milk (150ml)
  • Bicarbonate Of Soda (1 tsp)
  • Butter (3 tbs)
  • Vegetable Oil (2 tbs)
  • Cherry Tomatoes (6)
  • Bacon (12 slices)
  • Eggs (6)

  1. Preheat your oven to its lowest setting to keep everything warm. Peel 4 large potatoes. Grate 2 of them and set aside. Cut the remaining 2 into chunks and boil for 10-15 minutes until tender. Squeeze the liquid from the grated potatoes using a clean tea towel. Mash the boiled potatoes and combine them with the grated potatoes, spring onions, and plain flour.
  2. In a large bowl, whisk the egg white until it holds soft peaks. Gently fold in milk and add bicarbonate of soda. Then, mix this into the potato mixture.
  3. Heat a large non-stick frying pan over medium heat. Add 1 tablespoon of butter and some vegetable oil. Spoon 3-4 portions of the potato mixture into the pan and cook for 3-5 minutes per side until golden brown. Keep the cooked boxty warm in the oven while you prepare the next batch, adding more butter and oil as needed. This recipe yields about 16 crumpet-sized boxty.
  4. For the tomatoes, heat the grill to medium. Place cherry tomatoes in a heavy-based pan with a knob of butter and a little oil. Fry for about 5 minutes until softened. Grill the bacon until crispy. Serve the boxty stacked with bacon and eggs, with the grilled tomatoes on the side.
